Chicken Fricasée, even the name sounds fun. This is a light, healthy dinner that I find makes a nice treat.

Preperation Time: 10 min
Total Time: 20 min
Makes:  4 servings.

You need:

  • 2 sliced boneless, skinless chicken breasts
  • 2 stips of bacon ( or bacon bits )
  • 1 onion
  • 1 can cream of chicken soup
  • 1 can sliced mushrooms
  • 1 1/2 cups Rice

Preperation

  1. Cook 2 strips of bacon; dab on paper towels and set aside. Pour
    bacon drippings out of fry pan.   (Skip this step if using bacon bits instead)
  2. Sauté 2 sliced boneless, skinless chicken breasts and a sliced onion in a little oil until cooked through. 
  3. Stir in 1 can cream of chicken soup and 1 can drained sliced mushrooms.
  4. Add 1/2 cup water and 1/2 tsp. each salt and dried thyme. Bring to a boil. 
  5. Remove from heat and stir in 1 1/2 cups Rice and 2 Tbsp. chopped fresh parsley; cover and let stand 5 minutes. Top with crumbled cooked bacon just before serving.
