Preperation Time: 5 min
Total Time: 1 hour 5 min
Makes:  4 servings.

You need:

  • 4 Cornish hens
  • 6 tbsp. butter
  • 1/4 c. onion, chopped
  • 1/2 c. celery, chopped
  • 2 sm. cans mushrooms, drained
  • 2 c. rice, cooked
  • Dash of pepper
  • 1 tsp. salt
  • 1 jar apricot pineapple jam 

Preperation

  1. Defrost, rinse out Cornish hens.
  2. Melt butter and saute mushrooms. Add onions and celery. Cook until tender and yellow. Mix in rice and seasonings.
  3. Pack into Cornish hens loosely. Season hens with sage, oregano, poultry seasoning, etc.
  4. Bake at 350 degrees until brown and tender, Basting with jam every 15 minutes.
