The secret to good French Onion Soup is cooking the onions for a long time, which causes them to caramelize, giving the soup a delicious depth of flavour.

Preperation Time: 5 min
Total Time: 60 min
Makes: 4 servings.

You need:

  • 3 tbsp unsalted butter
  • 6 medium onions, thinly sliced
  • 1 can of chopped mushrooms
  • 1 tbsp Dijon Mustard
  • 3 cups of beef stock 
  • 1/2 cup of parmesan cheese
  • Sliced Mozzeralla

Preperation

Soup

  1. Melt butter in heavy, large saucepan over medium heat.
  2. Add onions and mushrooms and sauté until very tender and brown, about 25 minutes.
  3. Stir in Dijon mustard.
  4. Stir in beef stock.
  5. Stir in a little parmesan
  6. Simmer 20 minutes.
  7. Season to taste with salt and pepper.

To Asseble

  1. Preheat broiler.
  2. Ladle soup into ovenproof bowls.
  3. Top each with slice of toast and cheeses.
  4. Broil until cheeses melt and bubble.
