You need:
- 3 tbsp unsalted butter
- 6 medium onions, thinly sliced
- 1 can of chopped mushrooms
- 1 tbsp Dijon Mustard
- 3 cups of beef stock
- 1/2 cup of parmesan cheese
- Sliced Mozzeralla

- Melt butter in heavy, large saucepan over medium heat.
- Add onions and mushrooms and sauté until very tender and brown, about 25 minutes.
- Stir in Dijon mustard.
- Stir in beef stock.
- Stir in a little parmesan
- Simmer 20 minutes.
- Season to taste with salt and pepper.
To Asseble
- Preheat broiler.
- Ladle soup into ovenproof bowls.
- Top each with slice of toast and cheeses.
- Broil until cheeses melt and bubble.
